Q. I am wondering whether we are using the appropriate detergent for cleaning allergen products in manufacturing equipment. We are already using Liquinox in our cleaning processes. Can Liquinox be easily replaced with TERGAZYME detergent?

 

A. In cleaning allergen products Tergazyme would be the best detergent to break down the protein allergens.  Use a warm, but not hot (do not exceed 130 deg F) 1% solution of Tergazyme (10 g/L).  Use the Tergazyme detergent within eight hours of mixing up the solution.

Allergens are proteins that can cause a vigorous immune response in sensative people.  Allergens can be found in food compounds such as peanuts, eggs, dairy products, shellfish, wheat, fish, certain legums and tree nuts.  Some manufacturers want to be able to clean equipment that contacts these allergen containing ingredients.  Tergazyme is appropriate for this application.
